Alycia has represented Antigua and Barbuda at the United Nations Headquarters in New York City. She joined other chef’s representing the West Indian diaspora who presented a menu their respective countries, for dignitaries and the public to enjoy.  Alycia is driven by treating her clients by combining delicious flavors with elegant plating.

Learn to make Johnny Cake and Saltfish. Here are the ingredients that you will need before the class.


Johnny Cake

1 cup flour

2 tsp baking powder

3 tsp granulated sugar

½ tsp salt

1 tbsp butter

1/4 cup milk

Water as needed

vegetable oil for frying

Fried Plantains

1 plantain


10oz saltfish (ex. Pollock, or cod)

Tomato paste

1 Bell pepper (any color)

1 Scotch bonnet or habanero

1 large onion

1 avocado/pear
